Do you tire of the same old sides and salads? I do! I like my food to be exciting and provide variety, but it's easy to get stuck in a salad rut. This salad is really quick to pull together but it looks elegant.
For starters, there's no lettuce involved! So that's likely different from the last few salads you've consumed. While tomatoes and zucchini are a classic flavor combo, the capers and pine nuts really dress up this dish.
Yield: 2 - 3 servings
Ingredients:
2 medium sized zucchini, shaved or sliced very thin (about 3 cups worth)
1 heirloom tomato, chopped
¼ c pine nuts
2 T capers, rinsed
grated hard cheese (like Parmesan) to taste, optional
Process:
Using a microplane or sharp knife carefully slice zucchini and set aside. Lengthwise makes for the most attractive salad.
Toss zucchini with all other ingredients until coated
Notes:
To make this recipe dairy free and vegan, omit the optional parmesan cheese.
